As an expat from the States, it can be difficult having loved and lost your oven... but there's a plethora of recipes to meet your tastebuds' needs using stovetop, crockpot, and even microwaving methods! Light Tuna Lettuce Wraps

1 can tuna
2 boiled eggs
2-3 Tbsp oil (canola)
1/2 apple (finely diced)
1/2 onion (finely diced)
1 tsp dried parsley
Salt and pepper to taste

Lettuce leaves for wrapping. (a bunch type lettuce... not iceberg)
1. Warm pan to meduim-low heat. Place tuna in pan and slightly brown.
2. In medium bowl, mash eggs & tuna with fork until no large pieces remain.
3. Add diced apple, onion, and seasonings.
4. Add oil until desired texture and consistancy is reached. You can use mayo if that's your thing! ;)
5. Serve warm or cool. Wrap up in lettuce and enjoy.

This is also good on toasted bread as a sandwich, topped off with lettuce and a slice of tomato! yum.
